Breakfast Sandwich

Quick breakfast that’ll hold you over for a few hours. If you eat lots like me, remember to snack!

Ingredients:
× 2 slices of bread
× 4 slices of deli meat
× 2 large eggs
× mayonnaise
× Parmesan cheese, grated

How-To:
× Toast the bread. While it is toasting, heat up a nonstick pan to medium and add a little bit of oil. Once the pan has heated, crack the two eggs in it. Cook egg to desired doneness.

× Add a thin layer of mayonnaise on the toast. Put on two slices of meat each, then sprinkle on some cheese. Place a fried egg on top of each slice.

× Enjoy!

Quick Quiche

I had never been a fan of quiche before, and frankly, I actually didn’t even like it. I had given up on it for many many years, and then I Came across this simpler, quick quiche recipe. I thought “Why not?” because I didn’t have to make any pie crusts or anything. That, and it only had 4 steps! And I had everything I needed at home anyway.

I found it to be actually quite yummy. It was still alright as leftovers, but you need to make sure it’s heated thoroughly when reheated. Cold egg just isn’t very appealing.

Serves 4-5.

Ingredients:

  • 4 slices of bacon
  • 1/2 cup of cheddar cheese
  • 2 tbsp butter, melted
  • 4 eggs, beaten
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green onion
  • 1 tsp salt
  • 1/2 cup all-purpose flour
  • 1 1/2 skim milk

How-To:

Preheat oven to 350F.

Fry the bacon in a pan until cooked. Drain the oil and pat dry the bacon with paper towels to remove excess oil. Crumble (or use a knife to cut into small pieces) and layer into the 9 inch pie pan. (Allrecipes calls for a light greasing of the pan. I don’t remember if I did. I would think that the oil from the bacon and cheese would have been enough.)

Layer the cheese into the pan. Mix with bacon if desired.

In a large bowl, combine the melted butter, eggs, onion, green onion, salt, flour and milk. Whisk together until smooth (the flour may clump up quite a bit. Keep whisking it!). Carefully pour into pie pan.

Place into oven for 35 minutes until set (use the toothpick method). Make sure the middle reaches 74C!

Serve hot.

Favourite part: the “crust.” 🙂

Lettuce-Bacon-Egg-Chicken-Onion-Mayo Sandwich

For breakfast, of course!

I woke up at 9:30, and didn’t get out of bed until 10:45. I probably would have lay in bed a lot longer until 12 but turns out one of my friends’ exam was in the morning instead of afternoon. (Commence rush to make breakfast and bust it out the door… but find out seconds later that sister was taking a shower!!) I had just heard the water start running, so I thought I’d make a breakfast a little more elaborate than leftover hamburger buns, lettuce, mayo and ham.

Serves 1.

Ingredients (in order of appearance from top down) and How-To:

  • Top bun
  • Sprinkle of ground pepper
  • 2 strips of bacon
  • Fried egg with ground pepper
  • Grated Tex Mex cheese
  • 3 super thin slices of smoked chicken deli meat
  • 4 rings of red onion
  • 3-4 leaves of green leaf lettuce
  • Sprinkle of ground pepper
  • Thin layer of mayo
  • Bottom bun.

Breakfast Egg Sandwich

I made a delicious sandwich this morning.. It was around 11am. It’s past 3pm now. I am hungry again..

Ingredients:

  • Two slices of Wonder+ bread
  • Spinach
  • Mayo
  • 3 super thin slices of smoked turkey deli meat
  • 1 free range chicken egg
  • salt and pepper to taste.

How-To:

  1. Add a bit of oil to a pan so to egg doesn’t stick
  2. When the oil gets hot enough (tested by putting a drop of egg and see if it sizzles) crack the egg into the pan (I left it at medium heat)
  3. While that cooks, toast the bread to desired brown-ness.
  4. When that’s done, put on some mayo on each side
  5. layer on some spinach
  6. (Check your egg! Flip it over)
  7. Put on the smoked turkey
  8. Go back to the egg and wait until it reaches your desired done-ness.
  9. When the egg is done, put that on top of the turkey.
  10. Put the other slice of bread on top.
  11. Cut into rectangles or triangles, or however you like your sandwiches.
  12. Devour because it’s been 12 hours since you last ate.

Serves 1.
